THE CHRISTMAS THEY'VE BEEN DREAMING OF = (relative clause):
- They have been dreaming of (this special kind of) Christmas
= The Christmas (that) they have been dreaming of
You can see that in the relative clause, the preposition stays with the verb even if the verb ends up at the end of the sentence, so we keep saying DREAMING OF
